Shaka Mex food truck spices things up by bringing authentic and ono Mexican grinds to Oahu.
Owner and Chef, Nicole Henderson, shared that she was influenced to start her business from her Mexican roots. She said, “Mexican cuisine is in my bloodline and is deeply rooted in my spirit. I am a Mexican American, first generation on my father’s side and fourth generation on my mothers. My Mexican background (Western/Central Mexico) tie into: Guanajuato, Durango & Chihuahua. Learning from the elders in my family along the way and from a very early age influenced the food that I make. Growing up in this environment has also deeply influenced my spiritual connection to Mexican Cuisine. So, I chose to remain open to sharing a variety of Mexican influenced dishes.” Nicole also shared that she started this journey after learning and working in the hospitality industry for over 10 years, sharing, “It’s more about cooking now with intention…through small batch preparation. It is my belief that food does more than just nourish our bodies; it can connect people. For me, it’s an honor to share a meal that I prepare with one person, but to now have a vessel to feed more- it is a blessing. Although this path is not always an easy one! I am incredibly thankful for the challenges.”
Nicole’s menu consists of: Roasted Pork Tacos w/Pineapple Salsa, Carne Asada Street Tacos, Street Dogs, Nachos, Chicken Tacos, Coconut Horchata, Agua De Jamaic, and Chicken Enchiladas. She is open to doing community and private events with her food truck, but you can find her at pop-ups. Her next pop-ups include: the Residence Inn, Kapolei on Saturdays from 4-7pm, The CCH Food & Craft Fair April 21st from 12-4pm, Mililani Uka Craft Fair from 9-2:30pm, The Cinco De Mayo Festival at Fisherman’s Wharf on Sunday May 5th 3-8pm.
